1000 gr. pork belly
For the marinade
250ml of beer
Juice from an orange
½ tbsp. dry oregano
1 tbsp coriander seeds, crushed
3 tbsp mild mustard
In addition, we will need
½ tbsp. dry thyme
1 tbsp olive oil
1 tbsp Dijon mustard
1-2 lemons
Freshly ground pepper
Salt
Put all the ingredients for the marinade in a bowl and mix well.
Spread the chops in a pan, pour the marinade over them and let them marinate for 3-6 hours, covered, in the fridge.
Then heat up a non-stick pan while seasoning the chops with salt and pepper. Cook the pork belly chops on both sides.
In a bowl, mix the olive oil, the juice of 1-2 lemons, the Dijon mustard and the thyme.
Dress the hot pork belly chops with the lemon sauce and let them marinate for 5 minutes.
Serve the pork belly chops with your favorite side dishes such as pita bread, fried potatoes or tzatziki.
