For starters, let's talk about the Afros by Kechris Winery. Afros is a light, refreshing pet nat Retsina. What does pet nat mean? It means it is full of bubbles. The very limited use of resin and the innovative vinification make it the most original retsina on the market. We always thought of it as a gastronomic choice, but when we tried it in a wine cocktail, it was a revelation.
Afros Breeze is cool, with enjoyable acidity and a salty finish. Light in alcohol, it is ideal as an aperitif but it can pair great with the spicy and savory appetizers of Greek or ethnic cuisine.

In an Old-fashioned glass, smear half the rim with a little lime. Turn the glass over in salt to create a thin layer on half of the rim. Put the ice in the glass and add the Afros, lime juice, vanilla, and syrup. Stir carefully to preserve the wine foaming. Add some freshly ground black pepper and you are ready.
The Roza of Kechris Winery is another original approach to Stelios Kechris' favorite, retsina, based on Xinomavro from Goumenissa, rosé winemaking method, and a short stay in a barrel. Until now we enjoyed it with grilled tuna or a nice imam. Now we tried it in a cocktail and it blew our minds.
